What you need for this one is pretty basic
1 can refried beans (our family found Trader Joes makes the best for our American friends and on those on Vancouver Island we love Thrify's brand and the ones with jalapenos aren't too spicy at all)
Tortilla Shells - for the gluten free use corn or find Gluten Free shells available in frozen section of some places
Taco Seasoning - will share my recipe in another post
Optional Cheese - the little people in our house must have this added to theirs
It really is simple mix the spice with the beans. Then spread the beans in the middle ish section of the tortilla fold, ends in first then roll the rest. Place in a frying pan and heat until the outside of the shell begins to brown, flip and repeat till both sides are crispy brown.
Now for the fixings. In our house a meal that even hints at being mexican can not be eaten with out Guacamole. Again simple to make.
Avocado (we find two feeds the three of us who eat it)
Lemon (juice from one or a little less)
Garlic ( one clove per avo works well)
S&P to taste
Place it all in a bowl and mush with a fork. I hear Avocado is full of the good kind of fat.
